Vegan Pancakes

These vegan pancakes are fluffy and delicious, perfect for a scrumptious brunch. They're easy to make and can be customized with your favorite toppings.

Ingredients:

  • 1 cup all-purpose flour

  • 2 tablespoons sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 cup almond milk or any plant-based milk

Instructions:

  • 2 cups cold milk

  • 1 cup heavy cream

  • 2 tablespoons powdered sugar

  • 1/2 cup chocolate shavings

  • Whipped cream for garnish

  • Cocoa powder for dusting

Instructions:

Prepare the chocolate cake according to package instructions


In a bowl, combine the brewed coffee and Irish whiskey

Quinoa Veggie Bake

A wholesome and flavorful quinoa and vegetable bake, perfect for a healthy and satisfying meal.

Ingredients:

  • 1 cup quinoa, rinsed

  • 2 cups vegetable broth

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 bell pepper, diced

  • 1 zucchini, diced

  • 1 cup cherry tomatoes, halved

  • 1 cup broccoli florets

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup shredded mozzarella cheese

Instructions:

Warm the oven up to 190C 375F


Put quinoa and vegetable broth in a saucepan and mix them together


Once it starts to boil, lower the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the liquid is absorbed


Warm up the olive oil in a big pan over medium-low heat


Put in the garlic and onions, and cook them until they get soft


Broccoli, zucchini, cherry tomatoes, and bell pepper should all be added to the pan


After 5 to 7 minutes, the vegetables should be soft


Add the oregano, thyme, salt, and black pepper, along with the cooked quinoa


Combine well by mixing


Put the quinoa and vegetable mix in a baking dish


Add some shreds of mozzarella cheese on top


Put it in an oven that is already hot and bake for 20 minutes, or until the cheese melts and bubbles


From the oven, take it out and let it cool for a while


Then serve it hot
